Slow smoked onions are the first ingredient in this jammy, sweet-and-savory-and spicy sauce made with tomato, molasses, tamarind and spices. The deep, caramelized flavours complement the brighter spice of habanero pepper for a craveable sauce with just-right heat.
Passed down through four generations (100+ years!), Neil’s flavourful and delicious pepper sauce has survived and thrived ever since Granny cooked up the iconic recipe in her lil’ kitchen in Trinidad.
Neil smokes all the onions himself by a long slow process to get the deep, smoky flavour that makes this sauce so special.
